This is a regular when i'm in the house for lunch. It's a take on a technique my sister taught me about making egg fried rice, but with noodles. Should be able to bash it out in 5 mins.
VEGETABLE CHOW MEIN (for 1)
1 nest of egg noodles
various quick to cook vegetables (I use mushrooms and beansprouts, about a handful of each)
1 egg
soy sauce
toasted sesame oil
Boil the noodles in plain water according to packet instructions, then plunge in cold water to stop them for cooking further. Meanwhile, in a pan or wok, heat a teaspoon of vegetable oil until very hot, then add the mushrooms. Fry until just starting to colour then add the beansprouts and fry for a further minute or two. In a mug, crack an egg and season the egg with a few grinds of salt and pepper, then beat until the yolk and white are combined. Have your noodles close to hand, then drop the egg in the hot pan/wok, and cook for 5 seconds, then vigorously scrape the egg with a wooden spoon to seperate the egg into ribbons, and then instantly add the noodles to the pan. Toss together and season with soy sauce to taste, and remove from the heat. The eggs should be cooked so they are silky and tender, not chewy! Add a dash of toasted sesame oil and add some raw spring onion and chilli if your feeling exotic.. Enjoy!

simple savory tart
Better put a recipe up! If there's ever a bunch of ingredients left in my fridge that are getting past their best, i tend to make this tart. It's simple and really versatile.
SAVORY TART
200g ish puff pastry (all butter if poss!)
whatever leftovers/ingredients are knocking around
Really important to have a non-stick, ovenproof frying pan for this. Pretty much all frying pans with a metal handle are, just remember when your taking it out of the oven! I've been unbelievably vague so far, so i'll do an example. If I've got mushrooms, bacon and shallots in the fridge, i'll start by sweating the shallots (probs 2 or 3) roughly sliced in the frying pan (medium heat) with a little butter. Add a grind of salt and pepper and fry till the shallots are soft, probably around 3-4 minutes. Then i'll remove the onions and turn up the heat, and add the bacon (roughly diced) and mushrooms (a handful or 2, this will be the main bulk of the tart). Fry until just turning golden. Meanwhile i'll roll out puff pastry to the same shape as the bottom of your frying pan (flour the surface before to making rolling easier). Place it in the frying pan, covering the other ingredients, then pop it in the oven for 15-20 mins or until golden, tasty mid-week snack!

- Tomato and balsamic vinegar
- chorizo and pepper
- leek and potato (might need to parboil the potatoes)
- red onion and brie
Basically, sauté the ingredients your going to use to the point where they will be perfectly cooked after 15 mins in the oven.
